  • Peanut butter. For a healthier option, use natural peanut butter with no added sugar or preservatives. The label should simply say “peanuts and salt.”
  • crispy rice cereal. I used Barbara’s Brown Rice Whole Grains for this recipe, but classic Rice Krispies or your favorite brand will work too.
  • Maple syrup. Replace with honey if you like.
  • Oil. I used melted coconut oil for this recipe, but any type of oil you have on hand can be substituted.
  • Vanilla. The vanilla extract is optional, but it adds a nice depth of flavor.
  • Chocolate chips. Use lactose-free chocolate chips to make these vegan rice krispie treats or replace them with whatever you have on hand.
  • crumbly sea salt. The flaky sea salt is completely optional, but it accentuates the flavor of the dark chocolate and really puts it on top.

  1. Combine peanut butter, maple syrup, coconut oil, and vanilla extract in a medium bowl.
  2. Add the crispy rice cereals and mix gently until well coated.
  3. Spread the crispy peanut butter rice mixture into an 8×8” pan lined with parchment paper or aluminum foil.
  4. Spread melted dark chocolate and flaky sea salt on top, then chill for 3 hours or until hard.

Peanut Butter Rice Krispie Treats

Peanut Butter Rice Krispie Treats are packed with peanut butter and brown rice cereal and contain no refined sugar. They are dusted with dark chocolate for the ultimate no-bake dessert!

  • Preferably 1 cup of natural peanut butter
  • 1/3 cup maple syrup or sub with honey
  • 1/4 cup coconut oil melted or secondary with your favorite oil or melted butter
  • 1 teaspoon vanilla extract
  • 2.5 cups plain crispy rice cereal or brown rice
  • 1/2 cup lactose-free or flavorless dark chocolate chips
  • 1 teaspoon flaky sea salt optional
  • Line an 8×8-inch square baking pan with parchment paper or foil and set aside.

  • Place peanut butter in a medium bowl and microwave for 30 seconds until melted enough to mix easily. Add the maple syrup, coconut oil, and vanilla and mix well to combine.

  • Add the brown rice cereals and mix until well coated with the peanut butter mixture.
