With a few simple ingredients, you can make this easy fruit pizza in your kitchen. Top it with your favorite fruit for a fresh and colorful treat.

  • Cortex – A homemade sugar cookie dough is baked in a pizza pan to give it a base for your toppings.
  • Dip – A sweet cream cheese frosting is the “sauce” for cookie pizza. This marshmallow buttercream is another option if you don’t like cream cheese.
  • condiments – A mix of fresh berries adds color and flavor. Use whatever you like to design the top of the dessert pizza. We love the color combination of blackberries, raspberries, and blueberries.

How to make berry pizza

You will love how easy this berry pizza recipe is to make. The dough mixes in a few minutes. As the cookie cooks and cools, you can make the frosting.

Prepare the pan and the oven. Preheat oven to 350 degrees. Spray a 12 ½-inch rimmed pizza pan with cooking spray and line with a circle of parchment paper. (You can also use a 14-inch pan if that’s what you have.)

Make the cookie dough. Beat softened butter and sugar in large bowl until smooth and creamy. Add the egg and extracts and mix again. Gradually add the dry ingredients until you get a smooth dough.

Remove from oven and cool. Press dough into an 11-inch circle on prepared pizza pan. Cook until golden. Remove from oven and allow cookie to cool completely.

Glaze the sponge cake. Mix the ingredients for the cream cheese frosting until smooth and creamy. Spread evenly with an angled spatula over entire top of cookie crust.

Decorate and serve. Use your favorite berries or sliced fruit to create a fun pattern. Cut into slices and hollow out.

Storage Tips

This berry pizza is the freshest if you can serve it the same day you make it. Cover any leftover pizza with cling film and refrigerate for 1-2 days.

If you want to make this recipe ahead of time, prepare the cookie and wrap it without icing for 2-3 days. You can also make the glaze and place it in a covered container in the refrigerator until just before serving the shortbread pizza.

tips and tricks

  • Place a parchment paper circle on the bottom of the pan to prevent the cookie from sticking.
  • Make sure the crust of the sugar cookie is completely fresh before spreading over frosting. A warm cookie will melt the icing and become gooey.
  • Use a Pizza cutter to make nice clean slices.
  • Make small personal pizzas by rolling the dough 24 balls. Bake on a baking sheet, making sure to leave room for spread between each cookie.
  • Don’t have a round pizza pan? Press the cookie pizza dough into a circle on a large baking tray.

Recipe FAQs

What fruit is best to decorate a pizza with sugar cookies?

A mixture of fruits of different sizes and colors gives the pizza a good flavor and color. You can use one of your favorite berries on a dessert pizza. Some of our favorites are strawberries, tangerines, kiwis, and berries.

Avoid using fruits that turn brown like bananas and apples.

The best way to keep fruit-topped pizza from going soggy is to serve it as soon as you decorate it. The longer the glaze and fruit remain in the crust, the smoother it will be.
