Baked dinners are a great way to bring dinner to the table on busy weekday nights, and this easy recipe for Fried Spiced Pork Chops and BBQ Potatoes is one of my new favorites.
It’s so easy to make barbecue pork chops in the oven. It only takes about 30 minutes and you only need a baking sheet, so cleanup is easy. It’s the perfect dinner recipe for any night of the week.

Ingredients you will need
You will need these ingredients on hand to make these delicious BBQ Pork Chops:
- pork chops – Each chop should be about 4 ounces each and about 1 to 1.5 inches thick. Having a consistent size helps ensure that all of the pork chops cook in the same amount of time.
- spices – You will need chili powder, onion powder, garlic powder, a pinch of cayenne pepper, kosher salt, and black pepper.
- Olive oil – If you prefer, you can use another oil with a light flavor.
- Potatoes – We use both sweet potatoes and Yukon Gold potatoes, both peeled and diced.
- Red onion – You could use yellow onion if that’s all you have on hand.
- Barbecue sauce – Any flavor or brand will work. We like it a little spicy, like our homemade sauce.
- Dijon mustard – For a little extra flavor and a light kick.
- Lime – The lime gives a little freshness to the recipe.
- fresh coriander – If you’re one of those people who can’t stand cilantro, you can skip this one.

Step 1: Prepare the oven. Preheat oven to 450 degrees F.
Step 2: Season the ribs. While oven is heating, rub dry scrub into a small bowl mixing chili powder, onion powder, garlic powder, cayenne pepper, ½ teaspoon salt, and ¼ teaspoon pepper.
Next, lightly pat the pork chops dry with a paper towel, and then spread 1 tablespoon of the olive oil between them, coating everything around. Divide the dry dressing between the two ribs and rub on all sides.
Step 3: prepare the potatoes. In a medium bowl, sauté potatoes and red onion with 1 tablespoon olive oil. Sprinkle with ½ teaspoon salt and ¼ teaspoon pepper.
Once seasoned, spread them out in the middle of a large baking sheet and then place the pork chops next to them on the other side.
Step 4: Cook the potatoes and ribs. Place the pan in the oven and cook for 15 minutes.
Step 5: Prepare the barbecue mixture and finish cooking. While they cook, combine the barbecue sauce, Dijon mustard, and 1 teaspoon lime juice (save the rest of the lime for later) in a small bowl.
After 15 minutes, carefully remove the ribs and potatoes from the oven and then spread the barbecue sauce over each of the ribs before placing them back in the oven for another 5 minutes.
Check the pork chops to make sure they are at 145 degrees F before you stop cooking.
Once the pork chops are cooked, serve immediately with a squeeze of the remaining lime and a garnish of cilantro.
The best barbecue sauce to use
We have a great recipe for homemade barbecue sauce. It’s tangy with a hint of sweetness, rather than super sweet like many store-bought options. For this recipe, we suggest a spicy barbecue to complement the spices in the dry rub, but you can use whatever your favorite brand and level of sweetness are.
How long to cook pork ribs
Cooking times for pork chops can vary based on their overall thickness. For most of our recipes, including this one, we tend to use thinner cuts that are about 1-inch thick.
When you use pork chops that are about an inch thick, you only need 15-20 minutes to cook them to perfection.
It should always be checked with a thermometer. Pork chops are done when they reach an internal temperature of 145 degrees F.
How to do it in advance
Like most pork chops, these grilled pork chops are best served fresh from the oven. When you reheat ribs, they tend to dry out.
However, if you want to make them ahead of time, you can store them in a sealed container in the refrigerator for 2-3 days.
To reheat them, we recommend that you cut them into slices and microwave them for about 1-2 minutes or until heated through. If you prefer, you can heat them in a skillet over medium heat until hot.

Pork Chops and Fries is a complete meal of baked pork chops and perfectly tender potatoes that’s ready in 30 minutes.
- 4 pork chops, about 4 ounces each 1- 1.5 inches thick
- 2 tablespoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- pinch the cayenne pepper
- 2 tablespoons olive oil, divided
- 1 sweet potato, peeled and cut into 1/2-inch pieces
- 2 Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
- 1/2 purple onion, cut into thin wedges.
- 1 teaspoon kosher salt, divided
- 1/2 teaspoon black pepper
- 4 tablespoons barbecue sauce, any flavor will work We like one that is a bit spicy
- 1 teaspoon Dijon mustard
- 1 lime, divided
- 1 tablespoon finely chopped fresh coriander
Preheat oven to 450 degrees F.
Do a dry scrub. In a small bowl combine chili powder, onion powder, garlic powder, cayenne pepper, ½ teaspoon salt, ¼ teaspoon pepper. Mix everything together.
Lightly pat the pork chops dry with a paper towel, and then divide 1 tablespoon of the olive oil between them, coating them on all sides.
Divide the rubbed dry seasoning evenly among the pork chops by rubbing it in on all sides.
In a medium bowl, sauté potatoes and red onion with 1 tablespoon olive oil. Sprinkle with ½ teaspoon salt and ¼ teaspoon pepper.
Spread the vegetables out in the middle of a large baking sheet.
In a small bowl, combine the barbecue sauce, Dijon mustard, and 1 teaspoon lime juice (save the rest of the lime for later). Stir until well mixed.
Place the pork chops in the other half of the pan and brush with the BBQ sauce.
Place pan in oven and bake 20 minutes or until pork chops reach an internal temperature of 145 degrees F.
Serve immediately with a squeeze of the remaining lime and a garnish of cilantro.
