Protein Pancakes » Simple and Healthy Recipe! ✅

Traditionally, trying to lose weight and stay healthy meant carb-laden pancakes were off the menu. But all that has changed and the good news for pancake lovers is that they look healthy and there are now many new recipes with a very healthy nutritional profile. Not only do they make a delicious breakfast or brunch, but they also make a great filling for lunch and are convenient to freeze and toast again for dinner or as an emergency snack on the go.


3 eggs

½ cup cottage cheese

2 tablespoons of milk

1 teaspoon coconut oil

1 teaspoon vanilla extract

¼ cup whole wheat flour (or regular)

1 teaspoon baking powder

½ teaspoon baking soda

Pinch of salt

Optional dressing:

Blueberries, sliced ​​banana and chopped strawberries.


  1. Put all the ingredients for the pancakes in a food processor or blender and blend until smooth and liquid.
  2. Heat some coconut oil in a medium skillet over medium heat.
  3. Pour the batter into the pan and cook until the edges appear dry and bubbles begin to form. Flip to the other side for 1-2 minutes. Transfer to a plate or rack to cool and repeat the process until the dough is done.
  4. To serve, decorate with fruit and enjoy. You can add a tablespoon of yogurt for flavor.

This recipe would make 12 small or 6 large pancakes. Serve 2.
