Gluten Free Milk Dessert
An inspired dessert that I learned from my mother. A light and refreshing summer version of the famous caramelized apple ice cream.

Maybe it’s just a Midwest thing, but my team here in Seattle had never heard of caramel apple salad before. It’s shocking to me. It is this delicious and easy caramelized apple ice cream that you need this summer. We need more apple candy in the summer. There are so many apples EVERYWHERE and not enough for apple pie or apple crisp. Another recipe that my mom would make for my sister and me that drives us crazy. I never knew how simple this recipe was. There’s also enough sweetness in the apples, fresh smoothie, pineapple, honey-roasted peanuts, and caramel sauce, that no additional sugar is needed. How exciting for me in my 30s. Low sugar desserts and we don’t even use sugar free products!
Dessert was always on the menu at my mom’s house growing up. From coffee cakes to a bowl of ice cream with peanuts sprinkled on top, dessert was our fourth meal of the day. My mom loved making fun and exciting recipes for us. She did it one day and my sister and I went crazy. I’m not a big candy apple guy. All that heavy candy stuck to your teeth, no thanks. This recipe uses store-bought caramel sauce as a luxurious light and creamy topping against the chewy and gooey stuff. Everything you love about a cup of caramelized apple ice cream, cut up and eaten with a spoon. You and your family will love it.
Cool whisk is such a versatile ingredient and I love that we are still using it. It’s light, has minimal flavor, and is easy to use on top of a cake or mixed into a trifle. What is your favorite use for the cold whisk? Did you know that Cool Whip is stabilized whipped cream? The whipped cream in whipped cream will have a similar fluffy consistency, but will go flat after a day. The cool whip will stay smooth thanks to the rubber bands that make it stable. This recipe keeps for a week and is sure to get better when stored in the fridge.
Caramel Apple Salad

Diet: gluten free
- 8 ounces Cold Beater
- 20 ounces crushed pineapple, drained
- 1 cup honey-roasted peanuts, chopped
- 3 Granny Smith apples, diced
- 1 tablespoon apple cider vinegar
- Caramel sauce for drizzling
- In a bowl, combine all ingredients except caramel.
- Place in a 9 x 9 pan and drizzle with caramel sauce. Chill for two hours.
