I’ll be honest… I’m always looking for new ways to increase my vegetable intake for myself and the kids. It’s not that we don’t eat a lot, but there is always room for improvement.
The great part about making this shredded carrot salad is that it’s the perfect balance of crunchy and sweet, and it literally goes with any type of main dish.
When I want a vegetable but not one that I actually have to use the stovetop or oven for, this is my go-to every time, I’ll also put the kids to work and have them measure out the seasoning and mix it up!

Carrots –Clean and cut the carrots and place them in a bowl. Since you’re grating so many carrots, I prefer to do it with a food processor rather than a grater or cheese grater. You can also use a peeler for longer strips.
Apple –You can use any type of apple you like. I normally use gala apples, but Granny Smith would add a nice flavor.
Olive oil –The use of extra virgin olive oil provides a pleasant and clean texture and flavor. Coconut oil and avocado oil also work great.
fresh lemon juiceSqueezing a little juice adds perfect tartness. You can also use bottled lime juice or lemon juice if needed.
salt and black pepper – You can always add them to your preferred tastes.
Dried cranberries –Perfect for texture and adding a natural sweetness. I make it myself with this sugar free dried cranberry recipe.
Chopped nuts– I love adding nuts because of the crunch factor. They get soft if you add them ahead of time, so I add them just before serving.
How to make raw carrot salad
First step: Combine carrots and apples in a large bowl. Mixture.
Second step: Combine the ingredients for the dressing. Stir, shake, or blend until smooth.
Step three: Drizzle dressing over raw carrot salad and mix well. Let stand for 5 minutes.
Step four: Garnish raw carrot salad with cranberries and walnuts. Serve.
add honey – If you want even more sweetness and additional health benefits, add some local honey and sprinkle it on. I also think a drizzle of maple syrup would be delicious. There are sugar-free versions of both on the market if you want to cut down on carbs.
Add a little mustard – You can add a unique flavor to raw carrot salad by mixing it with a little Dijon mustard.
Use bottled vinaigrette – If you find you don’t want to make your own dressing, you can also use a store-bought one.
top with fresh parsley – Sprinkling with fresh parsley is an easy way to add color and a burst of flavor.
Add some apple cider vinegar – Some people also add a little apple cider vinegar to help with gut health and metabolism.
use raisins – Dried cranberries are great, but you can also use raisins. Just make sure that whatever nuts you’re adding, you read the label and check for added sugars. Many actually add a ton of sugar when it’s not needed.
change the nuts – Pecans are great in this raw carrot salad, but chopped walnuts would be another delicious option.
Can you do grated carrots first?
If you can. If you want to shred the carrots first, go ahead. Just add a few drops of lemon juice and mix and then place them covered in the fridge. Sometimes I do this to save time.
You can also save time by preparing meals and buying pre-shredded carrots at the store. This is a great benefit and time saver! Although they may be dry. Therefore, you may need to let the raw carrot salad sit for more than 5 minutes to absorb some of the dressing and soften.
What are the health benefits of adding carrots to your daily diet?
Carrots are a good source of fiber and great for your eyes! The more vegetables you can eat, the better! When I’m craving something sweet and crunchy, I’d rather make and eat this salad than add anything else to my body.
How do you store leftover fresh carrot salad?
Be sure to cover this salad with a tight lid and store in the refrigerator. This salad recipe should be stored in the refrigerator for best flavor.
I don’t recommend freezing leftovers, so make it when you serve and eat fresh.
