Vinegar – Red wine vinegar has a clean, bright, tangy bite. If you don’t have red wine vinegar, try white wine vinegar or even champagne vinegar.

Oil – Olive oil is so versatile! Switch up the flavor profiles and use sesame oil, avocado oil, or canola.

Other – The Dijon mustard adds flavor but also helps emulsify the dressing (to prevent it from separating). Honey is also an emulsifier!

How to make red wine vinaigrette

  1. Put all the ingredients in a small bowl except the oil.
  2. Slowly drizzle in the oil and whisk until ingredients are fully blended.
  3. For best results, chill for at least 2 hours before using.

To prevent the dressing from separating, we want to create an emulsion. This is when two liquids that don’t normally mix can mix (think oil and water).

Slowly pouring in the oil while whisking helps the mixture emulsify. This means that the oil and vinegar will not separate. It’s drizzling very slowly.

Don’t skip the honey or dijon, they also help emulsify the dressing!

How to preserve red wine vinaigrette

Store the red wine vinaigrette covered in the refrigerator, shake before use if necessary.

Freeze the red wine vinaigrette in ice cubes, then transfer to a ziplock bag. Let the cubes thaw and whisk together the dressing before using.
