Rustic Italian Millet Brunch » Simple and Healthy Recipe! ✅

  • 1 cup whole millet

  • 1/2 cup diced shallots

  • 1 teaspoon olive oil

  • 1 tablespoon minced garlic

  • 2 cups low-sodium chicken broth

  • 1/3 cup sun-dried tomatoes in oil, drained

  • 2 cups chopped Swiss chard

  • 4 eggs

  • Italian turkey sausage 4 pieces

  • 2 tablespoons fresh chives

  • 8 slices of fresh Parmesan cheese

  • freshly ground pepper to taste

  1. 1. In a large saucepan, toast 1 cup millet over medium heat for 2 minutes. Add 1 teaspoon of olive oil and 1/2 tablespoon of shallot to the pot and cook for 1 minute. Then add 1 tablespoon minced garlic and saute for 1 minute.

  2. 2. Pour 2 cups of chicken broth into the pot, bring to a boil, reduce to a boil and cook covered for 15-20 minutes. If you cook the millet too long, it will turn into a mush, giving it a more al dente consistency. While the millet is cooking, prepare the rest of the ingredients.

  3. 3. Once the millet is cooked, remove from the heat and add 1/2 tablespoon of chopped sun-dried tomatoes and 2 tablespoons of chopped Swiss chard. Top your millet pilaf and let it sit and wilt the Swiss chard while you cook the sausage and eggs.

  4. 4. Grill an Italian turkey sausage and fry 1 egg per person.

  5. 5. Combine millet pilaf, sausage and fried egg. Garnish with freshly ground pepper to taste and garnish with a sprinkle of fresh chives and slices of fresh Parmesan cheese.
