SAUTEED CHICKEN BREAST WITH FRESH HERBS AND GINGER. (SERVICES 2)

This chicken stir fry with fresh herbs and ginger is absolutely delicious and so easy to make and low carb too. Preparation and cooking take about 25 minutes.

Ingredients:

2 tablespoons vegetable oil 2 boneless, skinless chicken breasts Salt and freshly ground pepper Juice of ½ lime (about 1 tablespoon) 1 chicken cube put in bouillon with water (only 3-4 tablespoons needed) 2 teaspoons ginger finely grated 25g fresh basil leaves, broken 2 tbsp fresh mint leaves, broken

Method:

Heat oil in a medium skillet over medium/high heat until shimmering. Season both sides of the chicken breasts with salt and pepper and place them in the pan. Cook, turning once, until firm to the touch, about 5 minutes per side. Transfer the chicken breasts to a plate. Add the lime juice to the pan and scrape up any browned bits that stick to the pan with a wooden spoon. Add the chicken broth and ginger and bring to a boil. Turn off the heat, add the basil and mint to the pan and rotate the pan to combine. Divide chicken between 2 plates and pour herb sauce over chicken. Serve.
