Shrimp and vegetable skewers

This Shrimp and Vegetable Schnitzel recipe is a delicious light and flavorful meal for brighter weather that incorporates a variety of your favorite proteins. Perfect for seafood lovers.

– 60 ml of dry sherry in a glass – 1 tbsp. sesame oil – 1 tablespoon fresh ginger root, grated – 2 teaspoons light soy sauce – 1 large garlic clove, minced

– 360g seafood (mixed prawns and scallops) – 1 diced red bell pepper – 1 diced green bell pepper – 12 medium mushrooms – 4 soaked wooden or metal skewers


1. In a deep plate, mix the sherry, oil, ginger root, soy sauce and garlic. Place scallops and shrimp in marinade, turning to coat ingredients. Cover and refrigerate for 1 to 2 hours.

2. Place the bell pepper cubes in a pot of boiling water for 1 minute, then drain, this will soften them a bit. Remove shellfish from marinade, reserving marinade.

3. Put the marinade in a small saucepan, bring to a boil, lower the heat and cook for 5 minutes over low heat before removing from the heat. Do not boil it or it will disappear. Loosen with water if necessary.

4. Insert the skewers, alternating scallops, prawns, peppers and mushrooms.

5. Preheat barbecue or grill to medium-high heat and place skewers on grill directly over heat.

6. Close lid and cook about 10 minutes or until shellfish is opaque, turning once or twice, basting with hot marinade from time to time.

Serve with a splash of marinade on top.
