Smoked Trout Meatballs with Lemon Cream » Simple and Healthy Recipe! ✅

A fishing alternative that I have created to entertain my many fishing friends. – summer eggplant

  • Smoked Trout Meatball
  • 1 smoked trout fillet

  • 1 egg white

  • 1 tablespoon of water

  • 6 tablespoons pumpkin seeds, toasted and ground

  • lemon cream sauce
  • 1 cup of cream

  • 2 butter spoons

  • 1 lemon, squeezed and peeled

  • 1 tablespoon of white wine

  • 3 cloves of garlic cut in half

  • 1 bay leaf

  • 1 sprig of thyme

  • Salt

  • 2 teaspoons cornstarch +/-

  • 1 pinch of sugar

  1. Toast the pumpkin seeds in a pan. Cool and grind in a coffee grinder or mini food processor.

  2. Crumble the trout with your hands. Add 1/3 of the egg white, mix well.

  3. Make an egg by beating the water and 2/3 of the egg white.

  4. Shape the shredded trout into meatballs about 1 inch in diameter. Pass them through the beaten egg and then through the pumpkin seeds, repeat this step so that each meatball has passed through the egg and seeds twice.

  5. Place on a parchment paper lined baking sheet and bake at 350 degrees for about 12 minutes, just to heat through.

  6. To make the sauce, combine all ingredients except cornstarch and salt. Bring to a boil and simmer for about 15-20 minutes.

  7. Remove the garlic, bay leaf and thyme. remove sauce from heat

  8. Beat cornstarch 1/2 teaspoon at a time until desired consistency is reached.
