Anyone who has been following my blog for a long time knows that most of the recipes I create are low carb keto recipes or Trim Healthy Mama S. The fats and the good ones tend to be very simple.

I am a lover of all types of fruit, so lean meat or cottage cheese for protein plus fruit is my typical THM E meal. I try to avoid grains most of the time, so I reduce my E choices. I feel better when they are pimple free

The best part about this Southwestern Baked Chicken is that it still has some healthy carbs left over to use for your E meal. Feel free to pair it with some green veggies and baked tortilla chips or a fruit salad.

ingredients

Chicken strips – You can choose the cut of chicken you want, but I always choose boneless and skinless because of its ease of use and preparation.

cumin powder – Adds a good seasoning to the chicken. To switch up flavors, try taco seasoning instead of cumin and garlic.

Garlic powder – Make sure you use the powder and not the salt.

black beans – Canned black beans work great for this recipe.

frozen corn – I like to use frozen corn for the texture. Canned corn can also be an option.

Tomatoes – Cherry tomatoes are the perfect size for this dish.

Onion – Sweet red onion adds so much finesse!

fresh coriander – There is no seasoning that packs in the flavor like cilantro does.

Avocado oil – This is my favorite cooking oil for this recipe, but coconut oil or extra virgin olive oil would be fine too.

How to make Southwestern Baked Chicken

It’s so easy to bring those delicious Tex-Mex flavors to the table.

First step: Rub chicken wings with spices.

Second step: Cook chicken to 160 degrees on a meat thermometer. Transfer to a serving plate.

Step three: Meanwhile, mix the ingredients for the sauce. Pour over cooked chicken. Serve.

Cheese – Garnish the chicken with some shredded cheddar, colby jack, or even pepper jack cheese during the last 5 minutes of cooking.

condiments – Don’t forget that sour cream and guacamole are some of the best ingredients out there! If you want to add some heat to this Southwestern Baked Chicken, you can also sprinkle with some chili powder.

Southwestern Chicken Casserole – After the chicken is cooked, chop or shred it. Toss with salsa, 4 ounces sour cream, and 4 ounces cream cheese. Place in a large saucepan, top with grated cheddar cheese and cook until hot. It’s amazing!

Tray to bake – The chicken in this recipe was originally cooked in a skillet. Feel free to go back to that method if you prefer! Simply cook for about 5 minutes on each side until the chicken is cooked through.

What other ingredients can be added?

You can add many other delicious ingredients. Green chiles, bell peppers, a freshly diced jalapeno, you name it! Anything you like and want to add to this dish will taste great.

You can make it as spicy as you like or keep it mild with simpler flavors. You really can’t go wrong as long as you add the flavors you crave and love.

How can I use leftovers?

Use leftover Southwestern Chicken to make a burrito bowl or burrito! Simply add the ingredients to a burrito and enjoy your meal. (or if you’re eating low carb, add the ingredients to a lettuce wrap!)

This black bean dip is also great with baked tortilla chips. This is how my kids like to eat.

  • Cook for about 10-15 minutes or up to 160 degrees on a meat thermometer. I recommend checking at the 10 minute mark. They can be cooked quickly. Transfer to a serving plate.

  • Meanwhile, mix the ingredients for the sauce. Pour over cooked chicken. Serve.
