Spelled with Peaches, Mint and Feta » Simple and Healthy Recipe! ✅

Right now, peaches are coming into season here. I’m eating them by the dozen. Some standing right above the sink to catch the juicy drops, others cut into chunks that I share with Miss Magoo (my little fruit fiend). Some are dressed with spelled salads, fresh mint and a bit of sweet onion and then topped with crumbled feta cheese. This salad hits the spot on a warm night. Using precooked spelled will save you a lot of time. If you can’t find cooked farro, be sure to give yourself a full 45 minutes to cook farro. If you don’t have sherry vinegar, balsamic or red wine vinegar are other options. —It is not easy to eat green

  • 1 1/2 cups precooked spelled

  • 2 tablespoons sherry vinegar

  • 2 tablespoons olive oil

  • 1/2 cup sweet onion, thinly sliced

  • 1 cup peach, cut into 1/2″ chunks

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper, finely ground

  • 1/4 cup fresh mint, chopped

  • 1/2 cup feta cheese, crumbled (about 2 ounces)

  1. Cook the spelled according to the instructions, or boil it like pasta.

  2. Add the vinegar, olive oil, onion, peaches, salt and pepper to a large bowl, mix well and set aside.

  3. When the spelled is cooked, run it under cold water to stop the cooking process and wash excess starch from the grains. Drain well and toss with peaches and vinaigrette. Add mint and mix until well blended. Serve with feta cheese sprinkled on top.
