Spinach and Artichoke Omelette » Simple and Healthy Recipe! ✅

  • 1 tablespoon olive oil

  • 1 shallot, minced

  • 1 package (6 oz) fresh baby spinach

  • 1 cup of cooked shrimp

  • 1 cup quartered artichoke hearts, chopped

  • 1/2 cup grated Parmesan

  • 1/4 teaspoon of nutmeg

  • 1/8 teaspoon white pepper

  • 4 large egg whites

  • 4 large eggs

  • 1/3 cup 2% reduced-fat milk.

  1. Preheat oven to 350°F.

  2. Cook shallots in hot oil in 10-inch nonstick skillet over medium heat 3 minutes or until tender but not browned. Turn the heat up to medium-high and add the spinach and cook for 4 minutes, or until the water has evaporated. Combine the shrimp and the next 4 ingredients.

  3. Beat egg whites in large bowl until fluffy; beat the eggs and milk. Pour spinach mixture into skillet. Bake at 350 degrees for 25 minutes or until well set. Let rest for 3 minutes before cutting into 8 wedges.
