Sticky rice with coconut and lime » Simple and Healthy Recipe! ✅

  • 1 can of coconut milk (you can definitely use ‘lite’ if you prefer)

  • 1/4 cup unsweetened dry shredded coconut

  • 1 1/4 cups jasmine rice

  • 1 cup low-sodium chicken broth

  • 1 lime

  • 1/2 teaspoon salt

  1. In a saucepan with a tight-fitting lid, bring the coconut milk and chicken broth to a boil.

  2. Add the coconut, rice and salt and bring to a boil, stirring.

  3. Put the lid on the pot and reduce the heat to low. Allow to simmer until liquid is absorbed and rice is tender, about 15-18 minutes.

  4. Add lemon zest and juice and mix. Add more salt and pepper to taste.
