Marinara sauce is one of the simplest Italian sauces. Processes and tastes can vary greatly, but it all comes down to the tomatoes, garlic, onion, and herbs.

Marinara Sauce Recipes

While my family spaghetti recipe takes all day, this quick homemade marinara sauce is what I make when I’m whipping up calzones, chicken parmesan, or honeycomb pasta. You can make this ahead of time and freeze or you can make sure you always have the marinara on hand.

It is one of the most versatile sauces out there and can be the base for many other variations, such as creamy tomato sauce, pesto sauce, a smooth sauce, and even a base for soups like minestrone.

Tomatoes

As for the tomatoes, you have two options. One that will be slightly longer than the other.

You can use fresh cherry tomatoes, also called Roma tomatoes, and quickly steam and peel them. Or… use whole canned tomatoes. If you find a good canned tomato that doesn’t taste metallic, you’re golden!

In all honesty, while I love fresh tomatoes, it defeats the purpose of a Soon marinara sauce So I use canned tomatoes and I refuse to apologize for it. If you choose to steam and peel your tomatoes, here are the instructions how to peel a tomato.

In fact, if you visit a grocery store while in Italy, you won’t find a long aisle of various sauces and flavors. They sell a canned sauce base. It’s just tomato puree. Not even whole tomatoes, just tomato sauce.

A clean slate to add your favorite herbs, vegetables and seasonings. The canned sauce is also more acidic than the typical American versions which tend to lean towards a sweet sauce.

The choice is yours and I’m sure it will reflect how much time you have. You can also choose the texture, using a hand blender to make the sauce smoother, or leaving it nice and lumpy. Your choice again.

Pasta sauce vs marinara sauce vs pizza sauce

You may think red sauce is the same thing, however pasta sauce, marinara sauce, and pizza sauce all have their distinct differences.

Pasta sauce is usually a bit more complex with flavors and ingredients. Marinara sauce is generally meat-free, while pasta sauces often contain some form of minced meat (like a Bolognese sauce, for example). Because it often contains meat and other added ingredients, pasta sauce is generally thicker than marinara.

On the other hand, pizza sauce is usually more runny than marinara sauce. It should be thin enough to spread a thin layer on top of the pizza dough. As with this hearty marinara sauce, the marinara has more than one texture. There is an onion and garlic base that does not have the pizza sauce.

How to use marinara sauce

Use this quick and tasty marinara sauce recipe for anything that calls for ketchup or marinara sauce. It is excellent as a dipping sauce:

  • Pizza
  • Pants
  • mozzarella sticks

Making your own marinara sauce is easier than you think with these simple ingredients.

  • extra virgin olive oil – It is used to fry onion and garlic. Helps prevent them from sticking to the pan.
  • yellow onion – When combined with the garlic and the rest of the ingredients, the fresh onion adds texture and flavor to this classic marinara sauce.
  • Garlic cloves – I almost always prefer to use fresh garlic instead of garlic powder when cooking. A good marinara sauce has a good balance of garlic that provides an unmatched depth of flavor.
  • whole tomatoes – You can use canned or fresh tomatoes. If using whole tomatoes, choose about 8 large cherry tomatoes. Soak whole tomatoes in boiling water for 30 seconds, immediately transferring to an ice bath. The skins should peel easily.
  • Tomato paste – The tomato paste is concentrated and has a rich tomato flavor that really makes this simple sauce stand out.
  • fresh basil and oregano – I love that this recipe only calls for a handful of ingredients, but feel free to add chili flakes for heat or a bay leaf or Italian dressing for extra flavor.
  • Salt and pepper – Here I prefer to use freshly ground black pepper and coarse sea salt. Be sure to use good quality salt for maximum flavor.
  • white or red wine – For a more robust flavor use red wine, for a more delicate flavor use white.
  • Balsamic vinegar – This quick marinara sauce gets an extra kick with a little balsamic vinegar.

How to make marinara sauce

  1. Fry the onion and garlic. Heat the olive oil in a large skillet. Add onions, sauté until they start to soften. Next, add the garlic and continue to sauté, stirring to prevent it from burning.
  2. Add the rest of the ingredients. Then add the tomatoes, coarsely chopping them with a paring knife, add any remaining juices from the can. Add the other ingredients, mix to combine. Cook over low heat, stirring frequently.
  3. Mingle. If you like a thick sauce, leave it as it is and serve it! If you want a smoother sauce, blend with a hand mixer, being careful to mix in the larger chunks, but don’t squeeze them all the way through.

Storage and freezing

This marinade recipe will keep in the refrigerator for about 7-10 days. Just make sure you have it in an airtight container.

Alternatively, you can make it ahead of time and freeze it or you can make it to ensure you always have the marinara on hand. It keeps well frozen for 3-4 months.

Quick and Easy Hearty Marinara

  • 2 tablespoons of virgin olive oil
  • 1 small yellow onion, chopped
  • 3 garlic cloves minced
  • 28 ounces whole tomatoes*
  • 6 ounces of tomato paste
  • 2 teaspoons fresh oregano, packed and chopped
  • 2 teaspoons fresh basil, packed and chopped
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon coarse sea salt
  • 1/2 glass of red or white wine
  • 1 tablespoon balsamic vinegar
  • Heat the olive oil in a large pot. Add onions, saute until they begin to soften, about 4 minutes. Add the garlic and continue to saute for 2-3 minutes, stirring to prevent burning.
  • Add the tomatoes, coarsely chopping them with a paring knife, add any remaining juices from the can, but discard any large bits of herbs such as basil. Combine tomato paste, oregano, basil, pepper, salt, wine, and vinegar. Simmer over low heat for 15-20 minutes, stirring frequently.
  • If you like a thick sauce, leave it as it is and serve it! If you want a smoother sauce, blend with a hand mixer, being careful to mix in the larger chunks, but don’t squeeze them all the way through.
