These Cranberry Brie Bites are the best! Melted brie topped with sweet and sour cranberry sauce cooked in a buttery batter or puff pastry, all topped with a drizzle of honey and optional toasted walnuts. This appetizer is a favorite at any party gathering and they are always gone in minutes!

What makes this recipe so good?

  • The texture of these little snacks is incredible. Crunchy, crumbly shells wrapped in warm melted cheese and gooey cranberry sauce, THEN topped with crispy toasted pecans and a drizzle of honey. Hi Mom. This is one of those dangerous foods where, if you’re not careful, you’ll suddenly look down and realize you’ve eaten an entire bowl of blueberry brie in minutes.
  • This is one of those useful recipes that you can prepare it a day before and put it in the oven at the last minute. No problem.

Main ingredients

Broken mass – You can use a crescent puff pastry tube or a puff pastry tube! You will need about 8 ounces of dough so you can get 18 brie bites.

Brie cheese – If you’ve ever cooked brie or my cranberry sauce, then you already know how amazing and decadent this fantastic cheese is. If you’re not a fan, you can use camembert or even a cream cheese base. For a dairy-free version, try making it with cashew cream.

Cranberry sauce –Any homemade cranberry sauce will work here! For a super easy recipe, check out my Instant Pot Whole 30 Cranberry Sauce. Just be aware that these Cranberry Brie Bites will not be Whole30 compliant! Another incredibly delicious option would be bacon jam instead of cranberry sauce, and pepper jelly or orange marmalade would also work well.

  • You can make the Cranberry Brie Bites ahead of time, so all you need to do during the day is add the sauce and cook. Follow the directions below, to the point where you pour the cranberry sauce and brie into the bowls. Fill all the cups with the cheese but don’t add the cranberry sauce yet. Cover the muffin tin with plastic wrap and refrigerate. up to 24 hours. When you’re ready to serve them, simply uncover, add the cranberry sauce, and place the muffin tin in the preheated oven. You may need to increase the cooking time a bit since they are cold. Keep an eye on them and don’t let them burn!
  • Brie is quite creamy, so it’s not always the easiest to cut. If you have trouble cutting the brie, let it cool or freeze it for about 10 minutes. Also, you don’t have to worry about removing the shell. You won’t notice it after cooking the brie bites and it’s completely safe to eat!
  • Cranberry Brie Bites should be served hot. Try to time it so they can be eaten as soon as they come out of the oven and get their honey drizzle. If you’re eating leftovers, I recommend reheating them in the oven for a few minutes first.

For the blueberry brie bites

  • Cranberry sauce: For a sugar-free cranberry sauce, check out my Instant Pot Whole 30 Cranberry Sauce recipe. Keep in mind, though, that these brie bites are not Whole30 compliant or paleo-friendly.
  • To do this in advance: Prepare everything up to step 3. Fill each cup of batter with brie, then cover the muffin pan with plastic wrap and place the covered pan in the refrigerator for up to 24 hours. When ready to bake the brie sandwiches, remove cling film, top each cup of batter with cranberry sauce, and bake at 375°F. Please note that if cooking cold, you may need to add 1-2 minutes to the cooking time.
  • Make it dairy-free: Try a lactose-free cashew cream instead of brie.
