Three Berry Popsicles » Simple and Healthy Recipe! ✅

When the heat turns up, cool down with a delicious ice cream. Loaded with fresh berries, these popsicles are perfect for hot summer days. I couldn’t believe how simple these frozen treats were to make. You can strain the seeds if you want but I love the texture they give to the popsicles or use blueberries, pitted cherries or other favorites instead of the fruit or berry combo I have here or just strain, chill, add sparkling water and ready. You will have a delicious and healthy drink. The idea for this palette came to me from a Martha Stewarts show on vitamins and whole living. I use three berries instead of just blueberries and also some simple syrup instead of the sugar that was in the recipe on the show.

Simple syrup makes popsicles less icy and more velvety than sugar. —Kukla

  • • 1/2 cup of sugar

  • • 1 cup of blueberries

  • • 1 cup strawberries, peeled and sliced

  • • 1 cup of raspberries

  • • 1/4 cup fresh lemon juice

  1. Place the sugar and 1/2 cup water in a small saucepan and bring to a boil over high heat, stirring until the sugar has dissolved. Set aside.

  2. Combine blueberries, strawberries, raspberries, and lemon juice in a blender and blend until smooth, about 30 seconds. Add 1/3 cup simple syrup and mix until combined.

  3. Transfer puree to popsicle molds and freeze for 4 hours. Insert ice sticks and freeze for another 4-6 hours, or until frozen.
