Turkey Bruschetta Burgers are a great way to turn the classic Italian Antipasto into a dinner! Juicy turkey burgers are topped with burrata, a tomato basil salad, and a drizzle of balsamic glaze.

What is Bruschetta?

Bruschetta is grilled bread that has been rubbed with garlic and seasoned with olive oil and sea salt. It is originally from Italy and can include condiments such as tomatoes, beans, vegetables, cheese or cold cuts.

Ingredients for Turkey Burger Bruschetta

free range turkey – Skip the 99% lean ground turkey and opt for one with a little more fat. This will help keep the burgers from drying out and give them more flavor.

Basil – Fresh basil is highly recommended for this recipe. It is used both in hamburgers and in a tomato and basil topping.

Dried Basil, Garlic Powder, Chili Flakes – All of these dry spices are used in the burger mix. If you prefer to use all the fresh basil, increase the amount to 1 to 2 tablespoons on the patties.

Balsamic vinegar – Tasty, acid and a little sweet. It tastes amazing when combined with sweet tomatoes. Look for a good quality balsamic vinegar, as you will be using it raw in your tomato basil salad.

Tomatoes – Roma tomatoes are what I used, but cherry, grape, or campari tomatoes would work great too. Be sure to collect the seeds and juices so the tomato basil sauce doesn’t get too thick.

Garlic – Depending on how much you like raw garlic, you may want to increase or decrease the amount. Garlic powder can also be substituted.

Olive oil – Use in tomato and basil salad. Use a good quality extra virgin olive oil for the best flavor.

Burrata – I used burrata for that creamy and delicious interior. It melts beautifully on top of turkey burgers.

sandwiches – Since these are bruschetta burgers, it only makes sense to grill or toast the sandwiches. You can also rub them with a halved clove of garlic and drizzle with olive oil after roasting for maximum effect.

how to make them

In a large bowl, combine turkey, dry spices, salt and pepper, balsamic vinegar, and chopped basil. Use your hands to mix everything together, but be careful not to overmix or the burgers will be tough.

Form 4 meatballs with the meat mixture. Place meatballs on a plate or skillet sprayed with cooking spray. Dripping the oil will make it easier to remove the meat from the plate when you’re ready to grill.

I also recommend refrigerating the turkey meatballs for 10-15 minutes before grilling. This will help them firm up and be less likely to fall apart.

While the grill is preheating, prepare the tomato basil salad to add to the turkey burgers. Cut the tomatoes in half and remove the seeds. Dice the remaining tomato and put it in a bowl.

Add the grated garlic, chopped basil, balsamic vinegar, olive oil, and a good amount of salt and pepper. Tomatoes generally need a fair amount of salt. Helps enhance its sweetness and tomato flavor.

Set the tomato-basil dressing aside while you grill the burgers. Turkey burgers should be cooked to 165°F. This can take 8-12 minutes total, depending on the thickness of the meatballs.

During the last two minutes of cooking, add the burrata on top of the burger and place the sandwiches on the racks.

Add the turkey patties to the buns and garnish with some tomato basil salad, then drizzle with the balsamic glaze.

How to make juicy turkey burgers

  • Do not use 99% lean ground turkey. Instead, keep 93/7 or 85/15. Fat is a key component in keeping burgers from drying out.
  • Add more fat in the form of olive oil or avocado oil. You can also use pesto which would be a great addition to these bruschetta patties.
  • Add sautéed vegetables such as onion or zucchini. You can also add them raw, but if you do, I recommend grating them.
  • Don’t overcook your turkey burgers. The best way to ensure they are perfectly cooked is to use a meat thermometer. Internal temperature should be 165°F.

  • 1 pound lean ground turkey

  • 1 tablespoon chopped fresh basil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon dried basil

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon red pepper flakes

  • Salt and freshly ground black pepper to taste (I used about 3/4 teaspoon of salt)


  • 2 cups diced tomatoes, seeds and most of the juice removed

  • 2 tablespoons chopped fresh basil

  • 1 clove garlic, grated or minced

  • 1 tablespoon balsamic vinegar

  • 1 tablespoon extra virgin olive oil

  • Salt and freshly ground black pepper to taste

  1. Put all the ingredients for the bruschetta in a bowl and mix. Taste for seasoning and set aside until ready to use.

  1. Preheat grill to medium-high heat. Clean grill grates and brush or spray with oil.
  2. In a large bowl, combine all the ingredients for the turkey patties with your hands, being careful not to overwork the meat. Form 4 meatballs with the meat mixture.
  3. Grill the burgers on each side for about 4-5 minutes or until cooked through. During the last two minutes of cooking, place the burrata on top of the burgers. Arrange sandwiches on racks to brown while burrata melts.
  4. Arrange the turkey burgers on the toasted buns and decorate with a little bruschetta. Sprinkle with the balsamic glaze and serve.
