Occasionally my eyes are bigger than my stomach and I find myself with enough fruit on hand to open my grocery store.

The answer? Make a fruit salad.

This lightly vanilla fruit salad is the simplest fruit salad out there. The vanilla flavor is light, but adds something extra special to the best of nature.

If you are planning a 4th of July party or any other event, you can mix up the fruit salad the night before and let the flavors meld. One less thing to do the day of the event and the salad tastes even better after a night in the fridge.

If you find yourself with a surplus of fruit such as cherries, raspberries, apricots, peaches, nectarines, apricots, plums, melon, molasses or kiwi, throw it all together.

Your surplus fruit will magically disappear!

  1. Add the fruit to a large bowl.
