Vegetable And Cornmeal Pancakes » Simple And Healthy Recipe! ✅

These Fried Vegetable Pancakes are a healthy and colorful way to liven up dinner parties. —Lisa @ Healthy Bites and Bites

  • 1 1/4 cups chopped carrots

  • 1 medium zucchini

  • 3 shallots, sliced

  • 2 large eggs, beaten

  • 1/2 cup organic cornmeal

  • 3/4 teaspoon salt

  • 1/2 teaspoon turmeric

  • 2 tablespoons olive oil

  1. Coarsely grate the zucchini and let it sit for 5-10 minutes to release some of its water content. Squeeze the grated zucchini further and drain off any excess water.

  2. Coarsely chop the chopped carrots.

  3. Mix zucchini, carrots, shallots, cornmeal, salt, turmeric, and eggs in a large bowl until well incorporated.

  4. Heat a skillet with olive oil over medium-high heat.

  5. Once the pan is hot, scoop out 1/4 cup of the mixture. Put it in the pan and flatten the mixture so it looks like a small patty. Repeat for the rest of the mixture.

  6. Fry each side for about 3-4 minutes.
