These easy yogurt parfaits are the perfect way to start each day. They are fresh and fruity, sweet and spicy, and you will love the spicy touches of the muesli.

And who can resist all those gorgeous layers?

There is a nice combination of contrasting textures between the juicy sauce and blueberries, the thick and creamy yogurt and the crunchy muesli. It is the highlight of a parfait.

Try them early as sweet summer blueberries are in season!

Ingredients for the yogurt parfait recipe

  • 2 2/3 cups fresh blueberriesdivided
  • 1 tablespoon Water
  • 1/4 cup granulated sugarcan be adjusted to taste
  • 2 2/3 cups low fat plain greek yogurt
  • 1 cup cinnamon granola (break up larger groups before measuring)

Possible Substitutes and Variations

  • Make them healthy desserts replacing sugar with stevia (check package labels for conversion, each brand is a little different).
  • Try another fruit instead of blueberries such as strawberries, raspberries, cherries or peaches.
  • You also can use flavored yogurt just slightly reduce the sugar or honey added to the recipe. Another option is to flavor plain yogurt with a teaspoon or coconut extract.
  • Make them dairy free. Just use a lactose-free yogurt.
  • Substitute another granola flavor if you prefer. I just like the combination of cinnamon and blueberries.
  • You also can add other fillings to the parfait, such as finely chopped muesli, chia seeds, or chopped walnuts.
  • replace sugar with another option like honey or maple syrup.

How to make a yogurt parfait

  1. Make a fruit compote: Bring 2 cups of blueberries, sugar, and water to a boil in a small saucepan over medium heat.
  2. Cook, stirring frequently, until the berries have burst and the compote has thickened, about 5 to 8 minutes. There should be 1 cup of blueberry compote.
  3. Cool the compote through: Pour the mixture into a bowl and chill in the fridge until chilled. Wait to assemble the parfaits until you are almost ready to serve them so the granola is crispy.
  4. Layered Yogurt Parfaits: Between 12-ounce layers of 1/3 cup yogurt, 2 tablespoons blueberry compote, 2 tablespoons granola, and 1 tablespoon blueberries.
  5. Repeat the layering process one more time. Serve.

Can they be done in advance?

  • For best results, I recommend serving shortly after assembly. Otherwise, the granola will be stale and soggy because the moisture from the compote and yogurt will soften it.
  • However, you can prepare the compote a few days in advance. If necessary, you can thin it with a little fruit juice or water, as the natural pectins will thicken it.
  • If you really need to prepare brunch or something in advance, what I would suggest is to only do 4 layers (instead of 8). Layer yogurt, fruit compote, fresh blueberries and finish with granola on top.

Helpful tips for the best parfaits

  • You can use frozen fruit for the compote, but you’ll want to keep the fresh fruit if you choose to put the fruit in the parfait. If it’s winter and you’re having a hard time getting good quality fresh fruit, you can skip the fresh fruit layer.
  • Homemade or store-bought granola works great here.
  • Use rich and creamy yogurt for the best flavor. I recommend low fat or full fat (not fat free). Fage is my favorite here.
  • For better layering, don’t forget to crumble larger pieces of granola for more even layers.
